Skillet Shepherd's Pie

“A shortcut version of the pub classic — no tedious layering, no long baking, just pure comfort.”

1Ingredients

1.5 lbs ground beef or lamb
1 medium onion, chopped
1 bag (12 oz) frozen mixed vegetables (peas, carrots, corn)
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 cup beef broth
1 tsp dried thyme
3 cups prepared mashed potatoes (store-bought or leftover)
½ cup shredded cheddar cheese (optional)

Preheat your oven's broiler.

In a large, oven-safe skillet, cook ground meat and chopped onion over medium-high heat until browned. Drain excess fat.

Stir in tomato paste, thyme, and Worcestershire sauce. Cook 1 minute.

Add frozen mixed vegetables and beef broth. Bring to a simmer and cook 5 minutes until vegetables are warmed through and sauce thickens slightly.

Remove skillet from heat. Spread prepared mashed potatoes evenly over the top of the meat mixture. Sprinkle with cheese if using.

Place skillet under the broiler for 3–5 minutes until potatoes are golden brown and crispy on top.

Pro Tip

Using high-quality, pre-made refrigerated mashed potatoes from the grocery store makes this a true 30-minute meal without sacrificing flavor.
