Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove to a plate.
Reduce heat to medium. Melt butter in the skillet, then add garlic and sun-dried tomatoes. Cook 1 minute until fragrant.
Pour in heavy cream and Parmesan cheese. Stir well and let simmer 2–3 minutes until sauce begins to thicken.
Add fresh spinach and stir until it wilts completely into the sauce.
Return chicken to the skillet, spooning creamy sauce over the top. Warm through 1 minute before serving.
Serve this over quick-cooking pasta, rice, or with a chunk of crusty bread to soak up every drop of that incredible sauce.
