Cajun Shrimp and Sausage Skillet

1Ingredients

1 lb large shrimp, peeled and deveined
12 oz Andouille or smoked sausage, sliced
1 red bell pepper, diced
1 yellow onion, diced
1 tbsp olive oil
1 tbsp Cajun or Creole seasoning
2 cloves garlic, minced
¼ cup chicken broth
Fresh parsley for garnish

Toss shrimp in a bowl with half of the Cajun seasoning.

Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook 3–4 minutes until browned.

Add diced bell pepper and onion to the skillet. Cook another 4–5 minutes until vegetables are softened. Stir in minced garlic and cook 30 seconds.

Push sausage and vegetables to the side of the pan. Add seasoned shrimp to the empty space.

Cook shrimp 1–2 minutes per side until pink and opaque.

Pour in chicken broth and remaining Cajun seasoning. Stir everything together, scraping up any browned bits, and simmer 1 minute. Garnish with parsley and serve over rice or quinoa.

Pro Tip

Cajun seasoning blends vary wildly in salt content. If yours is very salty, hold off on adding any extra salt until you taste the finished dish.
