Classic Patty Melts in a Pan

“The diner classic, deconstructed. All the flavor of a juicy burger and caramelized onions without the grill.”

1Ingredients

1 lb ground beef
1 large yellow onion, thinly sliced
2 tbsp butter
1 tbsp olive oil
1 tbsp Worcestershire sauce
4 slices Swiss or Provolone cheese
Salt and black pepper
4 thick slices sourdough or rye bread, toasted

Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and cook slowly 10–12 minutes, stirring occasionally, until deeply golden and caramelized. Remove to a plate.

Form ground beef into 4 thin, wide patties. Season generously with salt and pepper.

Turn skillet heat up to medium-high. Add patties and cook 3–4 minutes per side until a nice crust forms.

Splash Worcestershire sauce over the patties in the pan.

Top each patty with a scoop of caramelized onions, then lay a slice of cheese over the top.

Cover the skillet 1 minute until cheese is completely melted. Serve the patties on top of toasted bread.

Pro Tip

Press a small dimple into the center of each raw patty with your thumb — this prevents the burgers from puffing up like meatballs in the pan.
