Skillet Steak and Potatoes

“Meat and potatoes, simplified. Crusty steak bites and crispy potatoes in rich garlic butter.”

1Ingredients

1 lb sirloin steak, cut into 1-inch cubes
1 lb baby potatoes, quartered
2 tbsp olive oil, divided
3 tbsp butter
4 cloves garlic, minced
1 tsp dried rosemary or thyme
Salt and generous black pepper

2Instructions

1

Place quartered potatoes in a microwave-safe bowl with a splash of water. Microwave 4–5 minutes until just fork-tender. Drain well.

2

Season steak cubes generously with salt and pepper.

3

Heat 1 tbsp olive oil in a large skillet over high heat. Add steak bites in a single layer and sear 1–2 minutes per side to get a nice crust. Remove steak to a plate.

4

Reduce heat to medium. Add remaining 1 tbsp olive oil and par-cooked potatoes. Cook 4–5 minutes until crispy and golden brown.

5

Push potatoes to the side, melt butter in the center, and add garlic and rosemary. Cook 30 seconds until fragrant.

6

Return steak to the pan, toss everything together in the garlic butter for 1 minute, and serve.

Pro Tip

Microwaving the potatoes first is the ultimate cheat code — it ensures they are fully cooked inside while the skillet gives them a crispy exterior.
